"I've been involved in BBQ for several years, both competing and serving as a KCBS certified judge. I've taken many classes over the years, all of which have helped me sharpen my game. When the opportunity came along to take the Greek BBQ class offered by Bill a few years ago came along I jumped at it. In addition to learning about spit-roasted meats, (particularly lamb, which no one else seems to work with), the class members also made fresh sausages from scratch. I learned some new techniques and worked with new ingredients. I'll be heading down to Coal City Specialty Foods in a few weeks and will definitely pick up some more.
I'm not sure if you've ever tried a sauce out of Cincy based restaurant Montgommery Inn, but your sauce has some flavor notes that start out exactly the same, but then your sauce has nice strong secondary notes that take a good sauce, to a great level.
If you ever get into the rub side of the business, let me know.

I just bought a bottle of your sweet and tangy sauce from Heritage Farmers Market in Pekin. Wow! Incredible! I love how different it is from normal, store bought sauce.
